I have been told I was a cautious child, reluctant to experiment, bluntly candid with my reactions when I did. With Mom, it was always something new, often with food.
With my early food experiences, cooked greens were not on my preferred list. The combination of texture and taste, especially boiled and overcooked, triggered an intense physical reaction. After traditional refusals had been exhausted, I remember explaining my physical reactions graphically, in detail, laying it all out.
Mom was convinced her variation on cooked greens was going to be a breakthrough. It was, though not as intended. With the first swallow, my whole body responded. The result was an uncontrolled projectile retch, most of which landed on her.
Yesterday, I considered which greens to have with my meal. I realize my greens are never boiled. With multiple cooking styles, each bringing out the flavors and natural texture, a variety of American and Asian greens are on my go-to list of comfort foods.
What changed? Mom let go of giving me the result and taught me the joy of discovery and wonder.
First, as I grew older, when I complained about a dish or a meal, I was invited into the kitchen to cook. No rules. Anything in the refrigerator or on the shelves could be used. The goal was to prepare something, anything, and eat what you prepared. Many things did not work, however, rarely did anything go to waste.
Second, I discovered the wonder and joy of new flavors and ways to prepare them. Cultural approaches were adapted and used. Spices reserved for one location and style were introduced to others. Fresh ingredients, especially from the garden, were enjoyed and treasured.
Third, less can often result in more. Simplicity, preparation, and execution combine for wonder and beauty.
Along the way, Life showed me how “every desirable and beneficial gift comes out of heaven. The gifts are rivers of light cascading down from the Father of Light. There is nothing deceitful in God, nothing two-faced, nothing fickle.” (James 1.17)
